My Chinese Recipes - How to Make Wonton in Sichuan Style


I am a cooking lover and interested in sourcing favorable recipes and always try them and share the happy times from the recipes with my friends and family. Of course, there is many experience of failure. I would like to share the tips and basic techniques with friends so we both can get improvement.

This dish is in chili taste, you may find exciting and sweating during enjoying the dish. That is the attraction! The method is not complicated or you may need to spare some time in sourcing the ingredients in Chinese supermarket. Hope, we will enjoy this exciting Wonton and love it from now on!

Ingredient:

4oz minced pork

16 sheets ready-made wonton wrapper

Seasonings:

1/2 tbsp egg white

1/4 tsp salt

1/2 tsp light soya sauce

1/2 tsp Chinese Wine

little pepper and sesame oil

Dipping sauce (most important):

1 tsp chopped spring onion

1 tsp chopped garlic

1 tsp dark vinegar

1/2 tsp ground Sichuan peppercorn

2 tbsp light soya sauce

1/2 tbsp dark soya sauce

1 tsp sugar

1 tbsp chilli oil

Method:

1 season the minced pork to make the filling

2 place 1 tsp of the filling on each wonton sheet, shape into wonton

3 mix the dipping sauce together and place in a tureen

4 cook the wonton in boiling water until done in around 8-10mins. Toss well with the dipping sauce.

The most attractive from this recipe is the chili taste! You can adjust the chili oil more or less to meet your taste. Beware of your hot mouth!

Tips - don't put too much filling in the wonton, just 1 small teaspoon is good enough. Otherwise the filling will break the wonton during boiling.
