8 ounces uncooked rotini pasta1/4 cup extra virgin olive oil1 (15 ounce) can lima beans, drained and rinsed2 cloves garlic, crushed1 teaspoon dried tarragon1/8 teaspoon salt1/2 cup grated Parmesan cheeseBring a large pot of lightly salted water to a boil. Place rotini pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain. Heat the olive oil in a skillet over medium-high heat. Place lima beans in skillet. Season with garlic, tarragon, and salt. Cook and stir until heated through. Toss with cooked rotini and top with Parmesan cheese to serve. It's a decent recipe, but nothing spectacular. Cheese and garlic are always good, though, and I was surprised that just two cloves of garlic went a long way in this recipe. Mainly, the reason I give this 3 and not 4 stars is that, though I like most beans, lima beans are pretty boring to me, even here. Was this review helpful? [ YES ]
