Colorful Meal ( Beetroot Paratha with Green Onion Subzi )
A nice meal to cheer up a dull evening. The red of beetroot paratha and green of onion subzi goes really well. It tastes as delicious as it looks too :)

Ingredients:
For Onion Subzi
1 big bunch of green onion, chopped finely1 dry red chilli1 tsp garam masala1 tsp dhania jeera powder1 tsp red chilli powder1.5 tsp amchoor powder ( dry mango powder )1/2 tsp mustard seeds1/2 tsp cumin seeds1/2 tsp turmeric powderfew curry leavesfew chopped coriander leavespinch of hingsalt to taste1 tbsp oilFor Beetroot Paratha2 cups wheat flour1 large beetroot, grated1/2 tsp red chilli powder1/2 tsp ajwain seeds ( carom seeds )1/2 tsp turmeric powder1/tsp sesame seeds1 small green chilli, finely choppedfew chopped coriander leavessalt to taste2 tsp oilIn a small bowl take 1/2 cup water and add garam masala, dhaniya-jeera powder, red chilli powder, amchoor powder, salt and curry leaves. Mix well and keep this spice mixture aside.Heat oil in a pan. Add mustard seeds, cumin seeds, hing and turmeric. Once the seeds start to crackle, add the spice mixture. Cook for a minute. Add the green onions and coriander leaves.Cook covered till oil separates.Turn off the heat.Ready to serve.Mix all the ingredients and form a firm dough.Roll thin parathas with a rolling pin as shown below.Cook it with a few drops of oil on a flat pan as shown below.Ready to serve.
Serving Suggestions:
Serve the parathas and subzi along with pickle and chutney.
Tip:
Do not add any extra water while cooking the onion subzi.
