Yolk biscuits

For  6 servingsDifficulty  mediumTime  1 ½ hours

Ingredients
Biscuit
3 eggs
4 tbsp of sugar
4 tbsp of flour

Yolk
250gr Sugar
1 small cup of water
5 egg yolks

Liquor mix
1 small cup of water
1 small cup of sugar
1 dab of rum

Preparation

Beat the eggs for the biscuit together with the sugar until fluffy.Add a dab baking soda very carefully; add the flour sprinkling it little by little through a strainer.Join carefully without stirring it.Pour into a buttered round mold.Put into a low temperature oven for 40 minutes.Remove the biscuit from the mold and cut it in two or three parts.Drunken it with the sugar syrup which is prepared with sugar, the small cup of water and rum.Fill in and cover with the yolk.Put 250 gr. Of sugar and a small cup of water; boil until it becomes sugar syrup, don’t let it harden.Remove from firePlace 5 yolks in another pot that isn’t of aluminum stir and add the sugar syrup in small amounts.Place in fire.Cook in low fire, stir continuously until it thickens.Cool it off before putting it on the biscuit.

Practical advice
Decorate with meringue and if you wish sprinkle with glazed sugar .
