This is the quickest recipe which I use to make sambar. It turns out really well. Give it a try and let me know.
1/2 cup toor dal (lentil)1.5 cup water1/2 tsp ginger , grated1 big tomato , chopped into large chunks1 small onion , chopped into large chunks1/2 capsicum ( bell pepper ) - chopped into large chunksFew curry leaves1 small green or red chili1 tsp sambar masalasalt to tasteCoriander leaves2 tsp oil1 tsp mustard seedsPinch of hing (asafoetida)1/2 tsp garlic pastePinch of turmeric1 tbsp tamarind juice1 tsp sambar masalaMix all the ingredients in a pressure cooker as shown above. Cook it for 5-6 whistles till the dal is boiled completely. The time will depend on the pressure cooker type and make.Open the cooker and set it aside. Now prepare the tempering. Heat oil in a pan and add the mustard seeds and hing. Once the mustard seeds crackle add rest of the tempering ingredients. Pour the tempering over the boiled dal.Add extra water if needed and cook on a low flame for 10 minutes.Add fresh coriander leaves to garnish.Ready to serve.Serve with Idli, Dosa or Rice. This is the quickest way I know. You can add any other vegetables you likeYou can also adjust the seasoning according to your taste.
